In a small pot, off heat, stir bone broth with gelatin. Let sit 3-5 minutes while you prepare the fruit.
Heat bone broth and gelatin mixture over low heat, stirring occasionally. Once the gelatin has melted and has a smooth consistency, add the honey to the pot stirring until it dissolves.
Add strawberry cream mixture to the pot and mix well over low heat.
